Don’t be caught running moves from last year’s playbook, it’s time to score a touchdown by taking your tailgating menu to the next level! Instead of the same boring hamburgers, try using bison meat instead in these flavorful sliders. Best yet, you can make the marsala onions ahead of time and bring them along to make grilling a breeze-- so you can focus on delicious food and cheering on your favorite team instead of babysitting the grill.
1 ½ c. sliced onions
1/4 c. marsala cooking wine (or your favorite red wine)
1 lb. ground bison
2 TB diced shallot
¼ tsp. dried thyme
½ c. shredded cheese (I used Colby Jack, use your favorite melty cheese!)
dash of kosher salt and ground pepper (to taste)
1 package Kings Hawaiian Savory Butter Rolls
1. Add 1TB olive oil to a skillet and bring to medium heat, adding onions and sautéing for about 10-15 minutes until they’re golden brown and very tender (be sure to stir frequently). Reduce heat. Add wine to pan and heat until absorbed, about 5 minutes. Set aside (or cool and store up to 3 days if you’re transporting to the game).
2. Heat grill. Mix together the meat, shallots, cheese, and thyme in a medium size bowl (don’t overwork the mixture!) Shape into slider patties and baste on both sides with olive oil. Sprinkle salt and pepper over patties.
3. Grill patties until they are medium rare or medium (observing all food safely guidelines, of course). Bison is a lean meat, so it’s best served a bit on the rare side.
4. Cut rolls in half lengthwise. Place cut-side down on the grill for a few seconds until slightly toasted. Take off grill, add a slider patty to the bottom of each roll, top with onions, and top with the second half of the roll. Press down slightly and enjoy!
